Watermelon Chutney

Ingredients:
- 4 cups (1 L) watermelon juice
- 2 cups (500 mL) watermelon rind (white part only), finely diced
- 2 tbsp (25 mL) apple cider vinegar
- 1 1/2 cups (375 mL) packed brown sugar
- 1/2 medium white onion, sliced
- 1 tbsp (15 mL) minced garlic
- 1 tbsp (15 mL) minced ginger
- 1/2 tsp (2 mL) mace
- 1/4 tsp (1 mL) ground cloves
- 1 tbsp (15 mL) minced jalapeno pepper
- 1 tsp (5 mL) lemon zest
- Juice of 1 lemon
- 2 tbsp (25 mL) currants
- 2 tbsp (25 mL) walnuts, toasted
Directions:
Reduce watermelon juice over medium heat to 2 cups.
Add remaining ingredients and simmer until almost dry.
Chill before serving.
Serving Size: Makes 2 cups (500 mL)
