Watermelon Chutney

Ingredients:

  • 4 cups (1 L) watermelon juice
  • 2 cups (500 mL) watermelon rind (white part only), finely diced
  • 2 tbsp (25 mL) apple cider vinegar
  • 1 1/2 cups (375 mL) packed brown sugar
  • 1/2 medium white onion, sliced
  • 1 tbsp (15 mL) minced garlic
  • 1 tbsp (15 mL) minced ginger
  • 1/2 tsp (2 mL) mace
  • 1/4 tsp (1 mL) ground cloves
  • 1 tbsp (15 mL) minced jalapeno pepper
  • 1 tsp (5 mL) lemon zest
  • Juice of 1 lemon
  • 2 tbsp (25 mL) currants
  • 2 tbsp (25 mL) walnuts, toasted

Directions:

Reduce watermelon juice over medium heat to 2 cups.

Add remaining ingredients and simmer until almost dry.

Chill before serving.

Serving Size: Makes 2 cups (500 mL)
