Directions: For marinade, combine oil, brandy, apple juice, Worcestershire sauce, garlic, and pepper. Place beef in a plastic bag set into a shallow dish. Pour marinade over beef. Close bag. Marinate in refrigerator 8 hours or overnight, turning bag several times to distribute marinade. Drain beef, reserving marinade. Grill 1 to 1 3/4 hours for rare 140°F (60°C), 1 3/4 to 2 1/4 hours for medium 160°F (71°C), or 2 1/4 to 2 3/4 hours for well-done 170°F (77°C). Transfer beef to a serving platter. Let stand 15 minutes before carving. Prep time: 10 minutes; 8+ hours to marinate Grilling time: 1 3/4 to 2 1/4 hours for medium + 15 minutes to stand Nutritional Information: Per Serving: 437 calories, 41 g protein, 6 g carbohydrate, 26 g fat, 108 mg cholesterol, 178 mg sodium. |
