Whatever your mood, the versatility of potatoes enables you to incorporate them in countless ways. Quick & Easy Potato Croutons: Wash and dice 1 lb [500 g] unpeeled potatoes. Drizzle olive oil to coat. Add 2-3 cloves of crushed garlic and 2 tsp [10 mL] of any dried herb of choice [basil, marjoram, rosemary or tarragon]. Toss again to distribute well. Bake in 400 F [200 C] oven until golden brown, about 50 to 60 minutes, stirring occasionally. Allow to cool and toss into Ceasar or any other salad. Quick & Easy Eggs Parmentier Antoine Permentier did much to promote the use of potatoes in France, hence, when his name is used in a recipe it indicates that potatoes are a major ingredient. Use leftover mashed potatoes as the base for an elegant brunch. In a small bowl combine 1-1/2 cups [375 mL] of mashed potatoes with one egg adding salt and pepper to taste. Make into 3-inch [8 cm] patties about 1/2-inch thick. In medium frying pan melt a little butter and oil; cook patties until golden brown and heated through. Top with poached egg and Canadian bacon or smoked salmon. |
