Contributed by: News Canada (NC) - Served with chicken, fish, crostini or even pasta, this pesto is versatile and nutritious. Use raw peanuts for a fresh accent, or toasted peanuts for a richer flavour. Ingredients:
Directions: In a food processor, pulse peanuts 4-5 times. Add basil and garlic and pulse for 1 minute. (TIP: Instead of a food processor, you can use a mortar and pestle, or finely chop ingredients by hand and combine.) Add Parmesan, oil and lemon juice; process until combined. The finished pesto should contain visible chunks of peanuts. Serve immediately, or store pesto in an airtight container in the fridge until ready to serve. *The Peanut Bureau of Canada is the Canadian information office of the American Peanut Council Serving Size: Makes About 1 1/2 Cups (375 mL). |
