Contributed by: News Canada A healthy cooking fiesta for kids (NC) - Gather the whole family in the kitchen to prepare these Veggie-licious Pizza Quesadillas. Have kids choose their toppings - red peppers, mushrooms, or any vegetable they would like to try - and let them assemble their own quesadilla. This recipe makes a fantastic lunch, dinner or snack, and is a great way to get kids excited about those good-for-you veggies. Ingredients:
Directions: Brush olive oil over one side of each tortilla and lay, oil side down, on clean work surface. Divide pizza sauce between two of the tortillas and spread evenly. Sprinkle each with equal amounts of cheese and veggies and top with remaining tortillas, oil side up. In a nonstick skillet over medium heat, cook stacked tortillas, one at a time, until bottoms are brown. With a spatula, turn over and cook until golden and cheese is melted.
