In medium saucepan, cook onion and carrot in butter for 10 minutes, stir occasionally.
Add broth, mustard, and paprika; cook over low heat 15 minutes. Mix cornstarch and cold milk; stir into soup; cook 5 minutes, stirring constantly.
Add cheese and beer; stir over low heat until cheese melts.
Taste for seasoning. Sprinkle with parsley. - NC
