1/2 cantaloupe, shaped into melon balls 1/2 or cut into chunks
1/2 honeydew melon, cut into chunks 1/2
1 head Boston lettuce 1
Fresh mint leaves
Mint Dressing:
1/4 cup firmly packed chopped fresh mint leaves 50 mL
1/4 cup lime juice 50 mL
3 tbsp vegetable oil 45 mL
2 tbsp liquid honey 25 mL
1 tsp finely grated gingerroot 5 mL
1/2 tsp each: grated lime zest and salt 2 mL
Directions:
In small bowl, whisk together dressing ingredients; set aside. In large bowl, combine blueberries,
cantaloupe and honeydew; set aside. Remove large outer leaves of lettuce and arrange on 4
individual salad plates. Tear remaining lettuce into bite-size pieces. Combine lettuce pieces with
fruit. Divide among salad plates. Drizzle with dressing. Garnish with fresh mint leaves, if desired.
