Directions: To make the fresh herb butter, combine ingredients in a small bowl and mix well with a fork. Let stand at room temperature for one hour. Wash the chicken breasts in cold water and pat them dry. Rub each one with vegetable oil and then sprinkle on both sides with salt and pepper. Preheat the grill for 10 to 15 minutes, with all the burners on high. Once the grill is hot, turn one burner off and turn the other(s) to medium. Place the chicken breasts over the burner that is off. Close the grill's lid, and cook the chicken for 10 to 12 minutes, turning once, just until the meat is opaque white all the way through. Transfer the chicken to a serving platter, spoon a dollop of fresh herb butter on top of each breast, and serve. Serving Size: Serves 4. |
