Ham and Potato Tostada

(NC) - This simple recipe from www.ontariopotatoes.ca is a delicious way to use left over boiled or roasted potatoes. Add a few ingredients to compliment the potatoes and you'll have a satisfying snack in minutes.

Ingredients:

    Ham and Potato Tostada
  • 1 tostada shell
  • 1 slice of lean deli ham, halved
  • 1/2 cup (125 ml) cooked Ontario potato, cubed
  • 2 tbsp (25 ml) shredded Cheddar cheese
  • 1 tbsp (15 ml) thinly sliced green onion

Directions:

Place tostada shell on a small microwavable plate.

Arrange pieces of ham over tostada shell. Top with cooked potato; sprinkle with grated cheese and green onion.

Set microwave on high and cook until cheese is melted and bubbling, about 30 seconds. Cool slightly before eating.

The best part is that kids can use their imagination and the ingredients on-hand to make their own variations. Add canned pineapple chunks, green peppers and mozzarella for a Hawaiian version or make a tostada club by using turkey slices with the potatoes and top with bacon and cheese.

Serving Size: Makes 1 Serving
