Bomba de Jicama

No, it's not dangerous, unless you've a stomach ulcer, but it's a regional favorite here in Leon, Guanajuato, Mexico. You may flinch at the ingredients, but trust me, the combination is delicious!
You'll need:
- 1 jicama (diced)
- lemon juice (fresh-squeezed)
- pineapple vinegar
- chili powder
- salt
- diced onion
- grated white cheese (they use a really dry, bland one here - I usually leave it out because I don't like it much, personally)
Here, we usually prepare our "bombas" in disposable
cups (as they're usually purchased from street
vendors), so that's the measurement I'll indicate-fill
the cup with jicama, then add salt, chili powder,
lemon juice, pineapple vinegar to taste, and put the
cheese and onion on top. Then serve-everyone mixes
their own!
I recommend you go light on the vinegar, unless you're
accustomed to consuming a lot. It does add a lot of
flavor, but too much ruins this snack!
