(recipe courtesy of Foodland Ontario) (NC) - This is terrific for brunch, as a meatless dinner entrée or as a side dish with grilled chicken. Use the microwave for a speedy way to cook potatoes.
In large nonstick skillet, heat 1 tbsp (15 mL) of the oil over medium high heat; cook garlic stirring for 1 minute. Add potato, 1/4 tsp (1 mL) of the salt and pepper; cook, stirring frequently, for 5 minutes or until light golden. Turn into greased 10 inch (25 cm) pie plate or quiche dish. Sprinkle with 1/4 cup (50 mL) of the Parmesan cheese.
Add remaining oil to skillet; cook onion, stirring for 2 minutes. Add tomatoes; cook, stirring frequently, for 5 to 7 minutes or until hot and slightly thickened. Remove from heat. Stir in basil, sugar and remaining salt. Pour over potato cubes. Sprinkle with remaining Parmesan cheese. Bake in 450ºF (230ºC) over for 10 minutes or until heated through and topping is golden.
Preparation: 20 minutes - Cooking time 15 minutes
