Coupled with warm pasta, it makes a fresh and lively first course. Or, serve as a savory accompaniment to an entree of grilled chicken or poached fish. Ingredients:
Directions: In large bowl, combine tomatoes, cucumber, garlic, basil, mint, salt and pepper; let stand at room temperature for 2 hours. In large pot of boiling salted water, cook pasta for 8 to 10 minutes or until tender yet firm. Drain and toss with sauce. Serving Size: Makes 6 servings |
