A terrific option for your holiday leftovers.
Cook rice as per package directions omitting salt and fat.
Melt margarine in medium saucepan over low heat. Stir in soy sauce. Add turkey; cover and heat for 5 minutes. Add peas, carrot, onion, green pepper and black pepper. Cook for 3 minutes over medium heat. Stir in egg and cook for 1 minute or until egg is done, stirring constantly.
Combine rice and turkey mixture; stir well. Serve warm.
