That's partly because we grown-ups don't know how to make it appetizing for them. By simply adding a dip to this often-overlooked but highly nutritious veggie, there's a good chance your kids will learn to love asparagus. Ingredients:
Directions: If the children are very young, cut the spears so that you only use the top halves of the spears, making it easier for them to bite into and chew. Plunge spears into boiling water, return to a boil, and cook until the spears are just tender when pierced with a fork. This should take about 2 to 6 minutes, depending on their thickness. Be sure not to overcook. When ready, rinse the spears under cold running water to stop the cooking and drain on a clean kitchen towel. To prepare the sauce, whisk together orange juice, orange rind, olive oil, sesame oil, and a bit of salt until blended. Arrange asparagus on a serving platter with the dipping sauce to the side or divide the servings onto plates with individual side dishes for personal dipping. This dish can be served chilled or at room temperature depending on your family's preference. To keep the excitement going, be sure to vary the dips. Try French Onion soup mix stirred into sour cream or Hollandaise sauce. With these fun combinations, the kids will never see asparagus the same way again.
