Contributed by: News Canada By J. Caroline Carroll (NC) - Mustard is an inexpensive ingredient and yet it adds enormously rich flavoring to party foods, holiday meals and everyday recipes. Indeed, it is so compatible with other ingredients you may not pinpoint it as the key reason for the mouth-watering flavor.
Mustard Glazed Ham
Remove rind from ham. Score remaining fat on ham diagonally and insert cloves. Heat oven to 325º F (180º C). Combine sugar, molasses, mustard, allspice, cinnamon and vinegar. Brush over ham evenly and sprinkle with breadcrumbs. Line roasting pan with foil, pour in apple juice and place ham in the liquid. Roast for 90 minutes or until golden. Cool for 20 minutes before slicing. Maple Mustard Carrots
Bring carrots to a boil and cook until tender. Drain, remove carrots, and keep warm. In same saucepan, add all ingredients, bring mixture to a boil until thickened, stirring occasionally. Return carrots and stir until well heated and glazed. Serve with turkey or ham. It might surprise you to know that Colman's became the mustard of choice for Queen Victoria in 1866, when the company was granted the Royal Warrant as choice manufacturers to the queen. The Warrant is still on all Colman's products today. |
