Contributed by: News Canada (NC) - Ontario's potato season runs year round, delivering fresh potatoes with an unmistakable flavour that can only come from locally grown produce. Ontario potatoes can be enjoyed on their own or incorporated into a variety of palate pleasing recipes.
Ingredients:
Directions: Peel potatoes; cut each in half lengthwise. Place flat side down; cut thin slices into each, taking care not to cut right through. Place in single layer in shallow roasting pan. Combine oil, garlic, pepper, thyme and salt; brush evenly over potatoes. Roast in 375 F [190 C] oven 45 to 55 minutes or until tender. Remove and let stand a few minutes before serving.
