Wild Mushrooms in Hazelnut Sauce

The blend of garlic, hazelnuts, onion and parsley gives these mushrooms a wonderfully subtle flavor. Serve with simply cooked meats.

Ingredients:

  • 2 cloves garlic, minced
  • 10 hazelnuts, shelled, skin on
  • 2 tablespoons minced parsley
  • Salt
  • 1 tablespoon olive oil
  • 1 small-medium onion, slivered
  • 1 pound wild mushrooms, like shiitake, or a mix of wild and small cultivated mushrooms, brushed clean, thick stems removed
  • Freshly ground pepper

Directions:

In a mortar or mini processor mash to a paste the garlic, hazelnuts, parsley and a 1/8 teaspoon salt.

Heat the oil in a skillet and sautÄ the onion a minute or two. Cover and cook over low heat for 10 minutes. Add the mushrooms and saute 2 minutes. Season with salt and pepper, then add the mortar mixture and continue cooking slowly until the mushrooms are cooked to taste.

Serving Size: Serves 4
