In medium saucepan, combine ingredients.
Bring to a boil. Cook over medium heat, stirring, for 3 minutes.
In food processor or blender, process mixture until smooth, about 1 minute.
Pass through fine sieve to remove seeds. Stir in 1 tsp (5 mL) lemon juice and 1/2 tsp (2 mL) almond extract.
Serve with Healthy Strawberry Pancakes.
Serving Size: Makes 2 1/2 cups (625 mL)
