Directions: To prepare dressing: In medium bowl, whip cream until thickened but not stiff. Fold in yogurt, pineapple juice, Bacardi rum and cream of coconut. To assemble salad: Arrange lettuce leaves on large platter. Decoratively place fruit over lettuce. Sprinkle with coconut. Serve with dressing. Serving Size: Yields approximately 1 3/4 cups (400 mL) |
