Orange Peel Barbecue Sauce

Ingredients:

  • 1 tablespoon slivered or grated dried orange peel
  • 1/4 cup each catsup, soy sauce, and orange juice
  • 1 tablespoon honey
  • 2 tablespoons oil
  • 1 teaspoon freshly ground pepper

Directions:

Combine all ingredients. Use as a marinade and basting sauce for pork, chicken, or beef.

Citrus grove workers often keep a couple of orange peels drying on a high shelf in the pantry. You can do this, too, if you save a peel cleaned of its pith and juice; when it becomes leathery, it is ready to use. You can buy dried orange peel in Oriental food markets, too.

Serving Size: Makes 1/3 cup
