1 teaspoon chopped fresh oregano or 12 teaspoon dried
4 garlic cloves, finely chopped
1/2 red onion, finely chopped
1/2 cup red wine vinegar
Freshly ground black pepper
Directions:
Mix together all the ingredients for the dressing and let sit, refrigerated, for at least 2 hours or
overnight. The dressing keeps, covered, for more than a week in the refrigerator.
