Bacardi Marinade for Chicken

Ingredients:

• 2 cups 500 mL fresh orange juice zest from two oranges
• 2 tbsp 30 mL chopped mint plus a dash each of curry powder, chopped cilantro and minced garlic
• 1/4 cup 60 mL soy sauce
• 1/2 cup 125 mL Bacardi Amber Rum
• 1 whole cut up chicken

Combine all ingredients in a shallow baking dish. Place chicken in marinade overnight. Grill chicken, basting with marinade until done. - NC
