Apple Mint Chutney

Add Instant Flavour With Less Calories

(NC) - Let's face it, eating healthy and fabulous flavour don't always go hand in hand. To add a kick to your meals while keeping the calories down, turn to spicy and savoury chutneys and salsas. For an even healthier, reduced sugar option, try using Splenda Brown Sugar Blend. More recipe ideas can be found online at www.splenda.ca.

Apple Mint Chutney
Prep Time: 45 minutes - Cooking Time: 1 hour, 30 minutes

Ingredients:

  • 2 cups (500mL) fresh mint, roughly chopped
  • 1/2 cup (125mL) Italian parsley, chopped
  • 3 cups (750mL) Granny Smith apples, diced and peeled
  • 1 cup (250mL) red onion, diced
  • 1/2 cup (125mL) sultana raisins
  • 1 cup (250mL) Splenda Brown Sugar Blend
  • 2 cups (500mL) apple cider vinegar
  • 1 tbsp (15mL) whole mustard seed
  • 1 tbsp (15mL) coriander seed
  • 1 cinnamon stick
  • 1 tbsp (15mL) coarse salt
  • 3- 2 oz. (57g) packages of pectin crystals

Directions:

Combine all the ingredients, except for pectin, in a large stainless steel pot.

Bring to a boil, reduce to simmer, stirring often for approximately 1 hour.

Add three 2 oz (57g) packages of pectin crystals.

Simmer for another 20 minutes. Cool chutney to room temperature.

Pour into sterilized jars, leaving 1/2 inch (1 cm) head space; seal (To sterilize jars, place both lids and jars in boiling water for 15 minutes before filling).
