Crunchy Oven-Fried Chicken with Buttermilk Gravy

Ingredients:

    Crunchy Oven-Fried Chicken with Buttermilk Gravy
  • 1 cup buttermilk or plain yogurt, divided (250 mL)
  • 2 tbsp Dijon mustard (30 mL)
  • 1 tbsp minced green onion (15 mL)
  • 1 tbsp vegetable oil (15 mL)
  • 1 clove garlic, minced (1)
  • 1 tsp freshly ground black pepper (5 mL)
  • 8 chicken drumsticks, about 1 3/4 lb (875 g)
  • 2 cups cornflake-style cereal, crushed (500 mL)
  • 1 cup grated Parmesan cheese (250 mL)
  • 1 pkg Lipton's Sidekicks Mashed Potatoes with Roasted Chicken Gravy (1)

Directions:

Whisk 3/4 cup (175 mL) buttermilk with mustard, green onion, vegetable oil, garlic and pepper. Add drumsticks and toss to combine. Cover and marinate in the refrigerator for at least 2 hours or overnight.

Preheat oven to 375 F (190 C). Combine cereal and cheese in a plastic bag. Remove chicken from marinade and shake each drumstick in the crumbs until coated. Arrange on a lightly greased foil-lined baking sheet.

Bake for 40-45 minutes or until coating is golden and chicken is cooked through. Prepare the mashed potatoes and gravy according to package directions. Stir remaining 1/4 cup (50 mL) of buttermilk into prepared gravy.
