This recipe takes minutes to prepare. The delicate cucumber ribbons look impressive and are easy to create by using a vegetable peeler. Prep Time: 15 min., Ready In: 15 min., Serves: 7
SLICE 1 of the cucumbers into long thin ribbons using a vegetable peeler; set aside. PEEL remaining cucumbers; cut into 1-inch cubes. Toss with remaining ingredients. PLACE mixture in center of serving platter. Arrange reserved cucumber ribbons around edge of platter. Tomato Topped Cheese & Bean Dip With its zesty flavour and creamy texture, this cheese dip deserves to be relished. Prep Time: 5 min., Ready In: 25 min., Yield: 2 cups
PREHEAT oven to 350°F. Place chickpeas, one cup of the cheese, cream cheese, sour cream and ground red pepper in blender or food processor container; cover. BLEND until smooth. Stir in green onions. SPREAD into nine-inch pie plate. BAKE 20 minutes or until light golden brown. Top with remaining 1/2 cup cheese and tomato. Serve with crackers.
