Candy-Speckled Popcorn Cake

Contributed by: News Canada

Inspire kids to learn to bake this winter (NC) - To kids, baking is one part science and one part magic. You mix up a bunch of ingredients, follow a few simple instructions and end up with treats that taste 10 times yummier than anything you can buy in a store. Of course, spending time together with your budding chef can be pretty magical for you, too.

Candy-Speckled Popcorn Cake
Here's a kid-tested treat from to whip up one weekend this winter.

  • 1/2 cup Imperial Margarine (125 mL)
  • 1 1/2 bags mini marshmallows (750 g)
  • 20 cups (2 bags, 80 g each) popped microwave popcorn, cooled, uncooked kernels carefully removed (5 L)
  • 1 1/2 cups colourful candy-coated chocolate pieces (375 mL)

In a large pot over medium heat, melt margarine and marshmallows.

In a large bowl, combine melted marshmallows with popcorn and chocolate pieces. With lightly greased hands, pat popcorn mixture into nonstick mini bundt cake pans.

Place in refrigerator for 5 minutes, then invert onto a serving plate. Great for sleepovers and holiday parties.

If you don't have mini bundt pans, you can use a large bundt or angel food pan or mini muffin tins or simply form popcorn balls.
