"All across Canada, Mexican cuisine is truly the best of two worlds," says Ivan Guillen, spokesperson for the Old El Paso line of tacos and fajitas kits. "This traditional taste treat is rich with authentic Mexican flavors teamed with contemporary flair. The cornerstone ingredient is cornmeal and flour to make the tortillas, accompanied by nutritious tomatoes, chili, sweet pepper and beans." Here's just one "fiesta in a box" for the whole family: Ingredients:
Directions: Brown beef in large skillet over medium-high heat, stirring occasionally; drain. Stir in 1 cup (250 mL) water and seasoning mix; cook for 5 minutes. Stir in corn, pepper and 1 cup (250 mL) of the cheese. Combine taco kit salsa and tomato sauce. Pour 1 cup (250 mL) into 9 x 13-inch (23 x 33 cm) baking dish. Place approximately 1/3 cup (75 mL) beef filling on each taco kit tortilla and roll up, leaving ends open. Place seam side down in pan. Pour remaining sauce over tortillas; sprinkle with remaining cheese. Cover with foil; bake at 375 F (190 C) for 20 to 25 minutes. Serve with sour cream if desired. To make ahead, cover and refrigerate the assembled dish; bake as directed. Prep: 10 minutes, for 6 Servings, cooking: 40 minutes |
