California Walnut Sweet and Spicy Snack Mix

California Walnut Sweet and Spicy Snack Mix (NC) - Get the best of two terrific tastes with this addictive snack mixture! Make up batches of each and mix together for a sweet and spicy flavour sensation. Serve up bowls of these for your next get-together or take along to munch during outdoor family activities. Great gift-giving idea too - just pack into cello bags (found at party stores) or glass jars and tie with attractive ribbon. Theyll go nuts for them!

Sweet & Scrumptious Walnuts:

  • 4 cups California Walnut halves, about 1 lb/500g 1 L
  • 4 tbsp pure maple syrup 60 mL
  • 2 tbsp sesame seeds 30 mL

In medium bowl, combine walnuts and maple syrup; mix until evenly coated. Stir in sesame seeds. Spread on non-stick baking sheet.

Bake in 325C (160F) oven for 20 to 25 minutes, stirring twice, until nuts are lightly browned. Allow to cool on baking sheet. (Nuts will become dry and crunchy as they cool.)

Store in air-tight container.

Makes about 4 cups (1 L)

Bold & Spicy Walnuts:

  • 1 egg white
  • 1 tbsp water 15 mL
  • 4 cups California Walnut halves, about 1 lb/500g 1 L
  • 1/3 cup granulated sugar 75 mL
  • 2 tsp coarse salt 10 mL
  • 1 1/2 tsp cumin 7 mL
  • 1/2 tsp cayenne pepper 2 mL
  • 1/4 tsp garlic powder 1 mL

In large bowl, whisk together egg white and water until foamy; add walnuts and mix until all nuts are coated; drain excess liquid. In small bowl, combine sugar, salt, cumin, cayenne pepper and garlic powder. Stir in dry ingredients until walnuts are evenly coated.

Spread on non-stick baking sheet. Bake in 325C (160F) oven for 20 to 25 minutes, stirring twice, until nuts are lightly browned. Allow to cool on baking sheet. (Nuts will become dry and crispy as they cool.)

Store in air-tight container.
