U.S. Farm-Raised Catfish Provides Fresh Flavor

Grilled Citrus Rosemary Catfish
U.S. Farm-Raised Catfish is available year-round. Catfish is packaged quickly after harvesting, making it among the freshest-tasting fish available.

Even better, farmed catfish eat a specialized diet that guarantees a slightly sweet, mild flavor. High in protein and low in saturated fat, catfish also provides healthy nutrients and omega-3 fatty acids.

Citrus and rosemary can brighten up even the dreariest winter day. Here, they make a catfish dish flavorful enough for entertaining and quick enough for a weekday:


  • 4 U.S. Farm-Raised Catfish fillets
  • 1/2 fresh lemon per fillet

Citrus Sauce:

  • Zest of one lime
  • Zest of one lemon
  • Zest of one orange
  • Juice of one lime
  • 6 ounces pineapple juice
  • 1/2 cup brown sugar
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 teaspoon salt


Preheat grill.

To make the sauce, combine all ingredients in a small sauce pan. Bring to a boil, reduce heat. Simmer five minutes.

Place catfish in a shallow dish and squeeze 1/2 fresh lemon over each. Sprinkle with salt and fresh ground black pepper. Let sit for five minutes.

Place catfish fillets on grill, skin side up, for three to four minutes. Turn and grill two to three more minutes.

Transfer catfish to serving plate, and spoon warmed citrus sauce over each fillet.
