Spicy Fireworks Rub Adds Sparkle to Catfish

U.S. Farm-Raised Catfish is available in supermarkets and specialty stores nationwide. And its mild flavor and firm texture make it perfect for a variety of recipes, from the traditional fried catfish served with hush puppies to broiled or baked fish in a gourmet sauce.

But great taste and versatility aren't the only reasons to choose U.S. Farm-Raised Catfish. Unlike their wild cousins, The Catfish Institute says, domestic farm-raised catfish live in a quality-controlled environment. The farms' enclosed pure freshwater ponds protect neighboring eco-systems. And these catfish are a sustainable food.

U.S. Farm-Raised Catfish is also an excellent source of protein and is low in fat.

How do you prepare it? This recipe from The Catfish Institute is perfect for your Fourth of July celebration or anytime during the grilling season.

This recipe makes enough spice rub to keep in your pantry and use many more times throughout the grilling season.

Ingredients:

  • 1/4 cup chili powder
  • 1/4 cup ground cumin
  • 1/4 cup ground coriander
  • 2 tablespoons packed brown sugar
  • 1 tablespoon salt
  • 1 tablespoon red pepper flakes
  • 2 tablespoons freshly ground black pepper
  • 4 U.S. Farm-Raised Catfish fillets, 6 to 8 ounces each
  • Vegetable oil spray

Directions:

Preheat grill or broiler to high.

To make fireworks rub, mix spices in a bowl, and spoon into a glass jar with a tight-fitting lid.

Spray both sides of each catfish fillet lightly with vegetable oil.

Sprinkle 1 teaspoon of fireworks rub (or adjust to your taste) on each lightly oiled catfish fillet. Grill or broil over high heat for 3 1/2 to 4 minutes per side or until the fish begins to flake when tested with a fork in the thickest part.

Note:

You can store the fireworks rub in a dark cupboard, away from heat; it will keep for two to three months.
