Contributed by: News Canada Make healthy meals fun with an unexpected favourite (NC) - Who doesn't remember mom coaxing you to eat something "good for you" - especially fish? Smell, texture and, of course, distinct taste can often discourage unrefined palates to try something new, no matter what mom says. But it doesn't have to be a battle to expand your little one's nutritional horizons. Try adding a twist to your next fish meal with a unique recipe that calls for a breakfast classic, along with the help of your mini chef.
Kids can get involved in preparing the meal from the get-go, as they'll be more likely to try something they've made themselves. They can measure, pour and mix all the ingredients. They'll also love the messy task of shaping the patties. It's a great way to let kids have fun preparing a healthy dinner that is packed with protein, and vitamins B, A, and D. Ingredients:
Directions: In large bowl, place salmon and remove and discard any bones and skin. Add Kellogg's Rice Krispies cereal, onion, celery, eggs, lemon juice and pepper. Mix well. Shape into patties. Coat large non-stick skillet with cooking spray. Place over medium heat. Add patties and cook about 4 minutes on each side, or until browned. Serve hot with Mustard Sauce.
