Saucy Maple Plum Pork Chops

Saucy Maple Plum Pork Chops
Host and cookbook author Sandi Richard comes to the rescue with a weekly series Fixing Dinner on Food Network that answers dinner-time cries for help. Each episode, Sandi consults with a different family to show them how they can organize their kitchen, their cooking and their lives so that they can have a family dinner every night of the week.

Prep Time: 10 minutes - Cook Time: 20 minutes

Ingredients:

  • 1 tsp vegetable oil
  • 4 bone-in pork loin chops (about 1 1/2 lbs / 675 g), or 1 1/4 lbs / 550 g boneless chops
  • 1 small onion, halved and sliced
  • 1/2 cup / 125 mL VH Plum Sauce
  • 1/4 cup / 60 mL maple syrup
  • 1 Tbsp Dijon or whole grain mustard
  • 2 Spartan apples, peeled and thinly sliced

Directions:

Take out equipment.

Heat oil in a large nonstick pan over medium-high heat. Cook chops, about 1 minute per side, until lightly browned. Remove and set aside.

Sliver onion adding to unclean pan as you slice, stirring until soft. Stir in plum sauce, maple syrup and mustard.

Return chops to pan, coating well with sauce, reduce heat to medium-low. Wash and slice unpeeled apples, Cover and simmer 5 minutes.

Serve with whole wheat couscous and green beans.
