Quick and Easy Smoked Sausage Jambalaya

Contributed by: Tiffani Mathews

Spicy, quick and hassle free. Can be made for a few people or alot. For more just add more broth, rice and vegetables.

This recipe can be made as mild or as spicy as you and your family see fit. If you are on a tight budget and need something that "sticks to your ribs", tastes good fresh or even as leftovers, and goes along way, this meal is for you.

Ingredients:

  • 3 pounds smoked sausage, cut into small pieces
  • 2 cans (14.5 oz.) chicken broth
  • 2 cans (14.5 oz.) Veg-all Cajun style vegetables
  • 2 2/3 cups instant rice
  • Salt, pepper, and Cajun seasoning to taste

Directions:

Fry cut up smoked sausage in a little bit of oil, add chicken broth, vegetables in juice, rice.

Bring to boil, and simmer till rice has soaked up the liquid from broth and vegetable juice.

Season to taste.

For every 3-4 extra people, add 1 (14.5oz.) can of broth, 1 can (14.5oz) Veg-all cajun style vegetables and 1 1/3 cup of instant rice.

Serving Size: Makes 6 - 8 Servings
