Pork Kebab

Contributed by: News Canada

(NC) - What could be easier! Ready-made barbecue sauce and Italian salad dressing combined with a few extra ingredients to make a snappy marinade.

  • 1 1/2 lbs. boneless pork top loin, cubed
  • 1/2 teaspoon hot pepper sauce
  • 1/4 cup Italian salad dressing
  • 1/2 green pepper, cut into chunks
  • 1/2 red pepper, cut into chunks
  • 1 14 oz. can pineapple chunks in juice, drained
  • 1 teaspoon lemon juice
  • 3 tablespoons honey
  • 1/2 cup barbecue sauce

In a bowl or large plastic bag, combine barbecue sauce, salad dressing, honey, lemon juice and hot pepper sauce. Mix well.

Add pork cubes and marinate at room temperature 1 hour or up to 24 hours in the refrigerator.

Reserving the marinade, alternately skewer pork with peppers and pineapple chunks. Place skewers into folding rack.

Grill over medium-low heat 46 minutes per side, turning once. During the last 3 minutes of grilling, brush reserved marinade over kebab.

Preparation time 0:15

Home Depot Tip:

Kabobs are made easier on the barbecue if you use a folding kebob rack instead of putting the skewers directly on the grill.

Serving Size: Makes 4 Servings
