(NC) - Here's a delicious way to infuse the nutritious value of whole grains into our daily meals, courtesy of Healthy Harvest Pasta and wholegrainpasta.ca:
Cook fusilli according to package directions; set aside. In a skillet, warm 30 mL (2 tbsp) olive oil; saute leek, carrot, beet, red pepper and zucchini 2-3 minutes.
Add spinach, fusilli, remaining olive oil, 125 mL (1/2 cup) Parmesan, salt and pepper, mixing well. Serve sprinkled with remaining Parmesan and chopped fresh parsley.
Preparation: 20 minutes, Cooking: 15 minutes
Serving Size: Makes 4 - 6 Servings
