Healthy Harvest Spaghetti with Roasted Salmon in Sesame Oil

Healthy Home: Whole grain pasta gets a healthy nod (NC) - Healthy eating contributes to overall good health - and yet grocery shopping for our families can be a confusing experience. Today, there is more information on food labels than ever before.

Healthy Harvest Spaghetti with Roasted Salmon in Sesame Oil
To help us make our way through the grocery aisles, the Heart and Stroke Foundation has initiated a helpful program called Health Check. The Health Check symbol is a bold checkmark in a red circle and appears on certain food packages. When you see the Health Check logo, it means that the food meets specific nutrient criteria based on Canada's Food Guide to Healthy Eating, and that the food is a healthy choice.

"Several foods now display the coveted Health Check mark on their packaging," says Sandra Kim at Ronzoni Foods Canada, makers of Catelli pasta, "including our line of whole grain, Healthy Harvest pasta. A large segment of our consumers, including parents with growing families, say they want to prepare nutritious meals without sacrificing on taste, so we summoned our Catelli expertise and knowledge of the pasta business to produce 12 whole grain varieties, all of which are packed with the key benefits of whole grain - and best of all, they taste great.

"The whole grain pasta line choices include Whole Wheat, Multigrain and even Flax Omega-3," Kim explained. "They are low in fat with no trans fat and are packed with fibre. Our Multigrain pasta, for example, has six grams of fibre for every 85 gram serving, and has been carefully crafted to ensure really good taste with the added nutritional value of whole wheat flour, rye flour, wheat bran, whole buckwheat flour, whole barley, and brown rice flour."

Preparation: 20 minutes - Cooking: 30 minutes

Ingredients:

  • 360 g fresh salmon (fillet with skin)
  • 60 mL (1/4 cup) roasted sesame oil
  • 60 mL (1/4 cup) sesame seeds, roasted
  • 15 mL (1 tbsp) canola oil
  • 15 mL (1 tbsp) tamari sauce
  • 15 mL (1 tbsp) fresh ginger, chopped
  • 375 g Catelli Healthy Harvest Whole Wheat Spaghetti
  • 1 yellow bell pepper, in fine strips
  • 2 green onions, finely minced
  • 60 mL (1/4 cup) fresh coriander, chopped
  • To taste salt and pepper

Directions:

Baste salmon with 30 mL (2 tbsp) roasted sesame oil; salt and sprinkle with 30 mL (2 tbsp) roasted sesame seeds.

Bake in oven preheated to 200C (400F) for 12-15 minutes. Set aside.

In a bowl, blend together remaining sesame oil, canola oil, tamari sauce and ginger. Set aside.

Cook spaghetti according to package directions. 1 minute before end of cooking time, add yellow pepper.

Drain pasta and pepper very well. Transfer to a serving dish.

Top with green onions, sesame oil dressing, salmon, remaining sesame seeds and fresh coriander.

Serving Size: Makes 4 to 6 Servings
