Fettuccine With Mushroom Sauce

(NC) - High cholesterol is one of the most common conditions affecting Canadians. In fact, almost half of all adult Canadians (48 per cent of men and 43 per cent of women) have unhealthy cholesterol levels, which can lead to heart disease or stroke. Yet, according to an Ipsos-Reid survey*, more than one-third of respondents do not understand that even slightly high cholesterol levels can be dangerous.
Canadian sportscaster Rod Black joined Making the Connection to urge Canadians to take action against high cholesterol to protect their heart health. Rod enjoys a healthy diet and regular exercise to keep his cholesterol at target levels. One of his favorite heart-healthy meals is shell pasta, topped with a mixture of lean ground beef, whole tomatoes, onions, and tomato sauce. When craving a creamier dish, Rod recommends Fettuccine with Mushroom Sauce.
Ingredients:
- 1/2 pkg (454-g size) fettuccine pasta
- 2 tsp non-hydrogenated margarine
- 1-3/4 cups sliced portobello mushrooms
- 3 tbsp 1% milk
- 1/2 cup fat-free sour cream
- 10-oz (284-ml) can undiluted light cream of mushroom soup
- 1/4 cup light creamy caesar salad dressing
- 1/4 cup grated parmesan cheese
- 1 tsp dried basil leaves (or use fresh)
- Dash fresh ground pepper
- Dash ground nutmeg (optional)
- 2 tbsp chopped fresh parsley (optional)
Directions:
Cook pasta according to directions (to al dente, or firm pasta texture).
Melt margarine in a large saucepan over medium heat. Add the mushrooms, stir until lightly browned.
Add soup, milk and parmesan cheese. Whisk until the sauce is smooth, about 2 to 3 minutes.
Reduce the heat to medium-low; stir in the salad dressing, sour cream, basil and nutmeg.
When the noodles are cooked, drain well and immediately toss with the sauce to evenly coat.
Sprinkle with parsley.
Heart-Healthy Tips from a Dietitian
- Add 1/2 cup cooked flaked salmon (an excellent source of heart healthy omega-3 fatty acids) or add sautéed red, orange and yellow peppers.
- Use whole wheat noodles to provide a source of fiber. Dietary fiber helps to reduced dietary cholesterol and promotes bowel regularity. Increase your fiber to between 25 to 30 grams per day.
It's time Canadians make the commitment and take charge of their heart health. If you have high cholesterol, make sure it's properly managed to reduce the risk of developing heart disease or stroke. For many Canadians, a healthy diet and regular exercise are not enough to reach target cholesterol levels. Ask your doctor about your target, and then take action to reach it.
