Vegetable Kabobs

Contributed by: Chris WebAdmin. of

This barbecue sauce is great on chicken. The vegetables you use can vary. Bell peppers, small chucks of corn on the cob, broccoli and cauliflower are some substitution ideas. Cooking times may vary with different vegetables.

  • Sauce:

    • 1 medium tomato, peeled or 6 to 8 cherry tomatoes
    • 2 pineapple rings (unsweetened, canned) or about 8 chunks
    • 1 Tbl. fresh lemon Juice
    • 1 Tbl. green onion
    • 1 tsp. dry mustard

  • Kabobs:

    • 8 small new potatoes
    • 8 cherry tomatoes
    • 2 medium onions or 8 pearl onions
    • 1 medium zucchini cut into 8 pieces
    • 8 fresh button mushrooms

Remove a thin strip of peel around the center of each potato.

Place potatoes & onions in a medium saucepan; add water to cover. Bring to a boil and cook

5 to 8 minutes or until potatoes can be pierced with a fork. Drain & cut each onion into 4 wedges.

Alternately thread vegetables on two eight 8-inch skewers which have been soaked in water for 3 hours. Place on broiler pan.

Broil 4 to 6 inches from heat for 10 minutes or until vegetables are tender, turning and basting with barbecue sauce.

Serving Size: Makes 4 servings
