Combine bread with milk let stand 5 minutes.
Brown pork or beef with onion, celery, mushrooms, salt and parsley until tender. Cool slightly.
Stir in bread mixture and egg; set aside. Spread half of the pasta sauce in 13x9-inch (3L) baking dish. Fill cannelloni with meat mixture and place in single layer on sauce in prepared dish. Cover with remaining sauce. Drizzle water over all.
Bake, covered, in preheated 350F (180C) oven for 45-50 minutes or until tender.
Serve topped with mozzarella cheese if desired.
