Directions: Cook peppers and onions in oil in a heavy-bottom pot on medium-high heat until softened, about 5 minutes. Add garlic, tomatoes, paprika, cumin and cook for 2 minutes more. Add rice, broth and chicken and bring to a simmer. Cover and bring the heat to low and simmer for 15 minutes. Remove the lid and add the mixed vegetables.
