Vegetable And Chicken Stir Fry

Ingredients:

  • 2 tbsp vegetable oil 30 mL
  • 1 lb boneless skinless chicken breasts, cut in thin strips 500 g
  • 1 pkg (500 g) frozen mixed vegetables 1 pkg
  • 1 can (10 oz/284 mL) condensed Chicken Broth 1 can
  • 3 tbsp cornstarch 50 mL
  • 3 tbsp soya sauce 50 mL

Directions:

In large non-stick frypan, heat oil to medium-high and sauté chicken strips until cooked through.

Stir in mixed vegetables.

In bowl, combine condensed soup, cornstarch and soya sauce; add to chicken / vegetable mixture in frypan. Bring to a boil then reduce heat and simmer, stirring occasionally, until liquid thickens and vegetables are tender crisp.

Serve with cooked rice, if desired.

Preparation: 10 minutes - Cooking: 20 minutes

Serving Size: Makes 4 servings
