(NC) - This is an elegant company meal when served on fresh green pasta (fettuccini verde) and garnished with small red pepper rings and lacy greenery.
Spray large skillet with cooking spray and heat over medium-high heat.
Add ginger and chicken breasts and cook until lightly browned; move chicken to one side.
Add onion and saute until it is transparent.
Add brandy and warm for several seconds, the ignite using long match stick. When flame dies, add broth, wine and pepper.
Cover and simmer 20 minutes or until done (juices will run clear not pink when chicken breast is pierced).
Whisk cornstarch into milk and add to pan. Cook, stirring constantly, until thickened.
