Chicken Stir Fry Japanese Style

Nutrition Kitchen Miso is equated to longevity in Japan By J. Caroline Carroll (NC) - Miso is a superfood in Japan, a nation revered for its longevity. Good health is greatly dependent on good eating habits the Japanese say - and that is why in Japan, a cup of miso soup in the morning is the right way to start the day.

Miso is a flavoring derived from soybeans. It has a nutty, full-bodied profile and is perceived to have high nutritional value and disease-fighting properties. Japanese research also finds:

  • Miso is a major source of high quality protein.

  • The linoleic acid of miso is thought to promote baby-like soft skin.

  • Soybeans contain several components that exhibit a suppressive effect on high cholesterol level in the blood.

  • The anti-oxidant properties of soybeans are even more enhanced with miso, working to scavenge free radicals and inhibit aging.

"One of the unique features of miso is its universal suitability to any kind of food including vegetables, meat, fish, shell fish, and seaweed," says Ken Horisaki, spokesperson for JC Creative Foods, a leader in exotic-gourmet sauces and dressings. "Our Pepper Miso sauce for example perks up beef entrees, with no MSG, no cholesterol and no transfats." The Shiro Miso mingles perfectly with seafood, and here is a sensational chicken stir-fry recipe using the Orange Miso sauce:

Ingredients:

  • 2 tbsp Butter or margarine
  • 400 g Chicken breasts, skin removed, cut into strips
  • 100 g Carrots, very thinly sliced
  • 100 g Broccoli florets
  • 50 g Mushrooms, thinly sliced
  • 100 g Green peppers, thinly sliced
  • 100 g Red peppers, thinly sliced
  • 125 ml JC Japanese Orange Miso (1/2 cup)

Directions:

Marinate the chicken breasts in a 1/4 cup of Orange Miso sauce. In a pot, bring water to a boil, add the broccoli and carrots and boil for about 2 minutes. Drain water.

In a frying pan, melt butter and cook the marinated chicken thoroughly. Add the mushrooms, red and green peppers, carrots, and broccoli in that order. Remove from heat. Add and toss another 1/4 cup Orange Miso and transfer to a plate.
