Chicken a la Cordon Negro

Contributed by: Chris WebAdmin. of

(NC) - When it comes to creating a romantic evening, dinner and wine may be the first thing that comes to mind - as it has for young lovers from the beginning of time. In fact, it would appear that the "Old World" cultures of men and women have simply thrived on the combination, so why not start your evening with one of the more romantic wines of the world - the Spanish sparkling wine they call a cava - and then serve an equally romantic, Mediterranean meal. Here is a traditional Old World recipe, which includes and suggests the famous cavas of Freixenet.

  • 1 chicken
  • 1 large onion
  • 2 bay leaves
  • 1 cup olive oil
  • Salt & pepper
  • Flour
  • 1/2 bottle Freixenet sparkling wine, Cordon Negro Brut

Heat olive oil in a large saucepan and saute the onion, garlic and bay leaves.

Skin the chicken and cut into quarters.

Mix salt, pepper and flour. Roll the chicken pieces in the mixture.

When the saute is ready, add the chicken and fry for 10-15 minutes, turning often.

Add the sparkling wine, cover and simmer for 45-55 minutes.
