Zesty Pepper Chicken With Olives

Ingredients:

  • 6 boneless, skinless chicken breasts
  • Salt and freshly ground pepper
  • All purpose flour
  • 3-4 tbsp (45-60 mL) olive oil
  • 2 cloves garlic, chopped
  • 1 onion, thinly sliced
  • 1/4 cup (50 mL) sliced green or black olives
  • 1 can (680 mL) or 2 cans (398 mL) Catelli Zesty Pepper pasta sauce
  • Chopped fresh parsley

Directions:

Pound chicken to 1/2-inch (1.25 cm) thickness.

Season with salt and pepper; lightly toss in flour. Saute chicken in 3 tbsp (45 mL) oil until golden and just cooked through. Remove chicken and set aside. Saute garlic and onion in remaining oil until tender. Add olives, pasta sauce and reserved chicken; simmer 3-4 minutes.

Serve chicken topped with parsley if desired.

Serving Size: Serves 6
