West African Curry

Ingredients:

  • 4 cups chicken broth
  • 3 lbs skinless, boneless chicken breasts
  • 1/4 cup butter
  • 2 medium onions, finely chopped
  • 2 tbsp flour
  • 2 - 2 1/2 tsp curry powder
  • 1 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 tsp ground turmeric
  • 2 tsp sugar
  • 1 1/2 tbsp lemon juice
  • 1/4 cup salted, skinless peanuts
  • 8 whole hard-cooked eggs, shell removed

Directions:

Cut chicken into cubes. In large frying pan, melt butter. Sauté chicken for 10 minutes over medium heat. Remove from pan and set aside.

Add to frying pan onion and following seven ingredients. Blend into butter. Stir in chicken broth until mixture thickens. Return chicken to pan and add nuts. Cover and simmer one hour.

Add eggs. Cover and simmer 30 minutes more. Serve with rice.
