Clean tenderloin, season and tie. Sear in clarified butter. Remove from pan and finish in the oven.
Add shallots, garlic, and morels to the sauté pan. Sauté until opaque and tender. Deglaze pan with white wine and add veloute sauce. Add veal glaze and heated heavy cream and reduce till proper consistency coats the back of a spoon).
Slice tenderloin and place on toast. Coat with sauce and garnish with minced chives and button mushrooms.
Serve on toast with hash brown potatoes.
