(NC) - Watermelon adds colour, taste and nutrition to this delectable stir-fry by acclaimed fusion chef Joseph Poon.
Mix together marinade ingredients and marinate beef at least 30 minutes.
Sauté beef in 1 tbsp (15 mL) hot oil in a wok or large frypan on medium-high heat until brown on all sides. Remove from pan with slotted spoon and keep warm.
Heat remaining 1 tbsp (15 mL) oil in wok. Add garlic, ginger, orange zest, sherry and watermelon and sauté for 30 seconds.
Add snow peas, peppers and red onions, stirring constantly until tender.
Stir in the sauce (without cornstarch) and bring to a boil. Dissolve cornstarch in a few spoonfuls of cold water and stir into sauce. Let cook about 1 minute, until thick. Return beef to pan and mix thoroughly. Add sesame oil and serve.
