Not just for weekend breakfasts or brunch, pancakes create fun and happy mealtimes - anytime. Robin Hood's test kitchen has come up with some innovative and delicious ways to prepare and serve them:
Prepare an extra batch of pancakes or waffles. Cool completely before stacking with waxed paper between them. Freeze in airtight bags. Pop in toaster from frozen.
Kids love "tiny tooney" pancakes. Prepare using about 1-2 tbsp (15-30 mL) batter.
Make a pancake sandwich replacing the bread with pancakes, filled with sliced cold meat, cheese, shredded lettuce.
Blanket morning pancakes with berries and yogurt rather than just syrup.
Grease pan lightly with butter or cooking spray for a lacy appearance. Leave non-stick pans ungreased for a smooth, evenly browned surface.
Wrap a warm pancake around a hotdog or sausage. Spread condiments on pancake before wrapping.
Use an ice cream scoop with wire release for dishing out the pancake batter - makes consistent size and rounded shape for even cooking.

2/3 cup (150 mL) finely chopped apple
6 slices bacon, cooked and crumbled
1/2 cup (125 mL) fresh berries, diced ham or grated cheese or chocolate chips.
