Pancakes Stack Up As Fun Meal Ideas

(NC) - Nobody knows just how long people have been making and eating pancakes, but it has probably always been much the same... a fun and happy time. Pancakes just seem to affect people that way. So, it's not surprising that Robin Hood, a company whose products are so often the beginning of special times, has launched a new line of pancake mixes that will be the start of many happy mealtimes for Canadian families.

Practically Perfect Pancakes
Robin Hood's new line of pancake mixes includes a "just add water" Homestyle variety, as well as two unique fruit-filled varieties - Cranberry Orange and Blueberry - that have proven to be a hit in taste-tests with Canadian consumers. All three varieties come in convenient, resealable, stand-up pouches that make for easy pouring and storing - no more messy shelves! And all are trans-fat free.

Not just for weekend breakfasts or brunch, pancakes create fun and happy mealtimes - anytime. Robin Hood's test kitchen has come up with some innovative and delicious ways to prepare and serve them:

  • Prepare an extra batch of pancakes or waffles. Cool completely before stacking with waxed paper between them. Freeze in airtight bags. Pop in toaster from frozen.

  • Kids love "tiny tooney" pancakes. Prepare using about 1-2 tbsp (15-30 mL) batter.

  • Make a pancake sandwich replacing the bread with pancakes, filled with sliced cold meat, cheese, shredded lettuce.

  • Blanket morning pancakes with berries and yogurt rather than just syrup.

  • Grease pan lightly with butter or cooking spray for a lacy appearance. Leave non-stick pans ungreased for a smooth, evenly browned surface.

  • Wrap a warm pancake around a hotdog or sausage. Spread condiments on pancake before wrapping.

  • Use an ice cream scoop with wire release for dishing out the pancake batter - makes consistent size and rounded shape for even cooking.

  • Quick additions to each batch of pancake batter:

    • 2/3 cup (150 mL) finely chopped apple
    • 6 slices bacon, cooked and crumbled
    • 1/2 cup (125 mL) fresh berries, diced ham or grated cheese or chocolate chips.
