Boost Breakfast With A Soy Smoothie

(NC) - Time pressed? Bored of breakfast fare? Try a soy smoothie for a change, blending whatever berries are in season.

Soy foods are versatile ingredients that can carry other flavors while adding their own plant-based punch to a healthy diet. No one is a bigger fan than Kevin Marriott, a soybean farmer from Petrolia, Ontario.

"A few years ago, I started paying more attention to good nutrition and exercise," says Marriott. "For me, getting in the routine of eating a low-fat, high protein breakfast has really helped me get through the day, which is especially important during our busy growing season."

After Marriott traveled to Japan and enjoyed flavorful soy products there, he began including them in his diet. At his local grocery store, soy beverages can be found in the dairy case, while tofu and meat substitute products can be found near the deli or close to the produce aisle.

As well as including protein-rich tofu in his favorite recipes, such as chili and stir-fry dishes, Kevin turns to soy beverages for a fast morning start. He shares the following recipe on the www.soyforlife.ca website.

Ingredients:

  • 1 cup (250 mL) chilled soy beverage
  • 4 ice cubes
  • 1 cup (250 mL) fresh berries
  • 1 banana
  • 1/2 to 3/4 cup (125 to 175 mL) silken tofu
  • 2 Tbsp (30 mL) honey (or to taste)

Directions:

Whir all ingredients together in a blender, pour into a large serving glass, and enjoy.
